Introduction to this document
Safety briefing - food poisoning and controls
All food handlers, whether they work in the kitchen or as servers, need a basic understanding of food poisoning and its prevention. Use our briefing to get your message across.
How to use it
Use our Safety Briefing - Food Poisoning and Controls to ensure your staff understand the risks and how to prevent them. It covers the types of food hazard they may encounter and what to do on a day-to-day basis.
We recommend that you deliver the briefing when a new starter joins and repeat it periodically to ensure that the rules stay at the forefront of their mind. Doing so will also ensure that employees don’t dilute the message with short cuts and inappropriate working methods.
We’ve included a quiz which you can use to assess whether the information has been absorbed. The correct answers are listed on the final page. If staff get any questions wrong, revisit the training to ensure they understand.
